Vellayappam/Appam
Vellayappam is a traditional breakfast from Kerala.It is made with rice,coconut and with or without yeast.It is healthy and easy to prepare.Vellayappam is usually served with mutton stew/vegetable stew/kadala curry.

Ingredients
Raw rice- 2 cups
Grated coconut- 1/2 cup
Cooked rice - one handful
Salt- as required
Sugar- 1 tsp
Dry Yeast- 1 tsp
Warm water-1/4 cup
Water/Coconut water- as required
Oil
Method
1) Mix dry yeast with warm water and keep aside for 15 minutes.
2) Wash and soak raw rice for 4-5 hours.
3) Grind the rice along with the grated coconut,cooked rice,sugar and enough water.
4) Then add dissolved yeast and salt.Leave the mixture for fermentation for overnight.
5) Grease the appachatty(pan) with oil. Pour some batter into a heated appachatty and spread.Close it with a lid and cook on low heat.
Serve hot
