Malabar Special Ghee Rice / Neychoru

Ghee rice / Neychoru is a very simple and tasty rice recipe.In Malabar area khaima rice/jeerakasala rice(short grain) is used to prepare ghee rice.


Ingredients:

Khaima rice /Jeerakasala rice / Basmati rice -  1 cup
Boiled water - 2 cups
Ghee / Dalda - 2 tbsp
Onion - 1( thinly sliced)
Cinnamon (patta) - 2 small pieces
Cloves (gramboo) - 4 nos.
Cardamom (elakka) - 2 nos.
Salt - as required

For Garnishing:

Onion - 1(small.thinly sliced)
Cahew nuts - few
Raisins(Unakka munthiri) - few
Ghee - as needed

Method:

1) Wash the rice and drain water.Keep aside.
2) Heat ghee in a pan ,fry cinnamon,cloves,cardamom and sliced onion.
3) Now add the rice and fry for few minutes.
4) Add 2 cups of boiled water and salt.Cover and cook until the rice is done and all the water is absorbed.
5) Heat ghee in another pan, fry onion,cashews and raisins.
6) Garnish with fried onion,cashews and raisins.
Serve hot with spicy chicken / mutton / vegetable gravy.
