Kerala Egg Roast
Kerala egg roast is a simple and spicy side dish.It can be served with vellayappam,chapati,
parotta and idiyappam.
Ingredients:
Egg - 4(boiled)
Onion - 2(large,sliced)
Tomato - 1(large)
Green chilli(chopped) - 2-3 nos.
Ginger(chopped) - 1 tsp
Garlic(chopped) - 1 tsp
Chilli powder - 1 tbsp
Turmeric powder - 1/2 tsp
Coriander powder - 2 tbsp
Garam masala - 1/2 tsp
Pepper powder - 1/2 tsp
Coconut milk- 1/2-1 cup
Curry leaves
Oil
Salt
Method
1) Heat oil in a pan,add onion,green chilli,ginger and garlic.Saute it for 5-6 minutes.Reduce the flame to low.Add tomato and fry it properly.
2) Now add chilli powder,turmeric powder,coriander powder,garam masala and pepper powder.Add salt and mix well.Add 1/2 cup of coconut milk ,cover & cook.
3) When the gravy becomes thick add the boiled eggs and curry leaves,cover the eggs with the gravy,cover and cook for 2 to 3 minutes.Serve it hot with chapati,appam,fried rice etc.
