Egg Biriyani
Ingredients
For Egg Masala
Boiled eggs-5
Onion-3(sliced)
Tomatoes-2(chopped)
Yogurt-3 tbsp
Coriander powder-3 tbsp
Chilli powder-1 1/2 tsp
Turmeric powder-1/2 tsp
Garam masala-1 1/2 tbsp
Lemon-1
Ginger-1 piece
Garlic-8 no.
Green chilli-4
Coriander & Mint leaves-half handful(each)
Oil-as needed
Salt-to taste
For Rice
Khaima rice/Biriyani rice-1 1/2 cups
Water-3 cups
Ghee-2 tsp
Cinnamon-3 stick
Cloves-5 no
Cardamom-3
Lemon juice-1 tbsp
Salt-to taste
For garnishing
Raisins-15 no
Cashew nuts-15 no
Onion-1/2 cup (thinly sliced)
Chopped coriander leaves-half handful

Method
Cooking the rice
1)In a cooking vessel, add 2 tsp of ghee,cinnamon,cloves,cardamom and 1 tbsp of lemon juice into water and boil it.
2)Put washed rice and salt(as needed).Cook it covered till the water is absorbed by the rice completely.
Cooking the egg masala
1)Grind coarsely ginger,garlic,green chilly,mint and coriander leaves.
2)Take boiled eggs and give three long cuts on the white portion of each egg without separating it.
3)Heat oil in a pan add sliced onions and saute well.Once color start to change add ginger-garlic-green chilli mixture.Then add chopped tomatoes,saute for few minutes.
4)Add chilli powder,turmeric powder,coriander powder,garam masala and mix well.
5)Add yogurt.
6)Add boiled eggs, adjust salt and keep aside.
7)Heat 2 tbsp of ghee in a cooking vessel,fry cashew nuts,raisins, sliced onion separately till golden brown.
8)Mix the rice with egg masala and garnish with fried onion,cashews,raisins and chopped coriander leaves.
