Palada Payasam
Palada payasam is a traditional payasam in Kerala.It is prepared with rice ada ,milk. and sugar.This payasam is usually served with Kerala sadya(Kerala feast).
Ingredients:
Rice ada - 1/2 cup
Sugar - 1 cup
Milk - 1 litre
Water - 1/2 litre
Cashew nuts - 10 nos.
Raisins - 15 no.
Cardamom powder - 1 tsp
Ghee - 2 tbsp
Hot water-as required
Method:
1) Soak rice ada in hot water for 30 minutes.Wash soaked ada in cold water and drain the water completely.Keep it aside.
2) Pour milk and water in to a vessel and boil it.Add sugar.Then add the washed rice ada.Stir it continuously till the milk thickens and becomes almost half the quantity.
3) Finally add cardamom powder.Heat ghee in another pan and fry raisins and cashew nuts,add it to the payasam.Serve hot.
