Bamboo Rice Payasam(Mulayari Payasam)

Bamboo rice collected from the seeds of  flowered bamboos.Bamboo rice payasam is very tasty.In this recipe I used bamboo rice,coconut milk and jaggery.


Ingredients

Bamboo rice-1 cup
Jaggery syrup(Sharkara pani)-2 cups
Thick coconut milk-1 cup
Thin coconut milk-2 cups
Ghee-2 tbsp
Cardamom powder-1 tsp
Cashew nuts,Raisins(dried grape)-25 gm 
Water-2 cups

Method

1)Wash and soak bamboo rice over night.


























2)Pressure cook bamboo rice with 2 cups of water,allow to cool.
    3)In a pan add 1 tsp of ghee,cooked bamboo rice and jaggery syrup.Cook on low medium heat     till mixture becomes thick and starts separating from the pan.


  












  









4)Then first add medium thick coconut milk.When the coconut milk reduce to half the quantity add thick coconut milk and cardamom powder and remove from fire.
5)Heat 1 tbsp of ghee in a pan and fry raisins and cashew nuts add it to the payasam.
