Koonthal Roast / Squid Roast / Kanava Roast
Squid is very healthy seafood item and it is low in calories.Kerala style squid roast is very spicy and tasty.
Ingredients:
For Marinate:
Squid / Koonthal / Kanava - 500gm
Red chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Pepper powder - 1/2 tsp
Salt - As required
For Roast:
Onion - 2 nos.(large,sliced)
Tomato - 1 no(large,chopped)
Ginger - small piece(chopped)
Garlic - 5-6 (chopped)
Green chilli - 2-3(chopped)
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1/2 tbsp
Pepper powder - 1 tsp
Garam masala - 1/4 tsp
Salt - To taste
Oil - As required
Curry leaves
Method:
1) Clean and cut the squid into rings.
2) Marinate squid with chilli powder,turmeric powder,pepper powder and salt.Keep aside for 30 minutes.Add enough water and pressure cook the squid in medium flame.
3) Heat oil in a pan / manchatti(mudpot) , add sliced onions,ginger,garlic and green chilli.Saute till onions become light brown in color.
4) Add chopped tomato and curry leaves.Mix well.
5) Next add red chilli powder,turmeric powder,coriander powder and garam masala.Saute well.adjust salt.
4) Add the cooked squid and fry well.Serve with rice,appam, or with chapati.
